2018 GK Supper Club Recipe from Muss & Turner’s

Hidi's Tartare


  • 2 pounds fresh beef, preferably trimmed and seamed top round

  • 2 tablespoons caper, rinsed

  • 2 tablespoons shallot, brunoise

  • 2 tablespoons chives, chopped fine

  • 1tablespoons dijon mustard, preferably maille brand

  • 1tablespoons evoo

  • 1-2 teaspoons pungent mustard oil, to taste

  • salt and black pepper, to taste

Grind the beef through a medium-sized die (1/4") into a well-chilled bowl. Add remaining ingredients and stir gently, to avoid crushing the meat, until ingredients are well incorporated. Taste, and season again with salt and mustard oil to your desired level of seasoning and spice level.
