Currently overseeing operations at bartaco, an upscale street food concept known for its relaxed and stylish atmosphere, Valletta leads strategic planning, market expansion, and profitability initiatives.
Previously, Valletta served as Chief Operating Officer at Birdcall, a rapid-growth, tech-driven quick-service concept in Denver, CO, focusing on all-natural foods and community impact through the '1% Back to the Community' program. Prior to that, he held the same role at MINA Group, a renowned collection of over 30 chef-driven restaurants by James Beard Award-winning Chef Michael Mina, delivering Michelin-star-inspired dining experiences. Valletta also spent seven years with Del Frisco's Restaurant Group as Director of Operations, leading multiple locations and upholding the brand’s reputation for modern, elevated steakhouse experiences.
